Sustainability, Local Sourcing and Nutrition Top List of Hottest Menu Trends for 2010

Survey of more than 1,800 professional chefs – members of the American Culinary Federation (ACF) – reveals that local sourcing of ingredients, sustainability and nutrition will be the hottest trends on restaurant menus in 2010. Locally grown produce, locally sourced meats and seafood, sustainability, mini-desserts and locally produced wine and beer top the list of nearly 215 culinary items in the “What’s Hot in 2010” survey. Food Retailing’s New Battleground: Small Format Stores

What happened to the so-called British Invasion? You know the one where Tesco’s Fresh & Easy small-format food stores were going to sweep across America and turn this country’s food retailing industry on its head. The end of October will see the one-year anniversary of Fresh & Easy’s first store opening in Hemet, California. M&S are getting fresh, can Mark Bolland put the love back in to their stores?

The retailer has opened fresh fish counters, butcher’s shop and a rotisserie in its stores at Meadow Hall, Sheffield and Bluewater, Kent in a bid to diversify its food offering.

The counters will offer a range of fresh met and fish, ready to eat shellfish and cooked meats as well as cutting and butchery services.

M&S says the fresh food offering “complements our existing offer in large food halls” and “highlights the quality and provenance of the M&S fresh food offer”.

Working as I do with some 25 different b-to-b marketers, I spend a good bit of time each day discussing lead generation with campaign managers. And not a day goes by where one of them doesn’t wonder aloud, “Why should mail still be part of our lead-generation mix?”
